Sweet Potato Slaw With Peanut Sauce Recipe
Here’s a delicious recipe I made up myself, enjoy!
Prep time - 10 mins
Bake time - 25 mins
Serves - 1 to 2 people
INGREDIENTS
2 sweet potatoes
Peanut Sauce (I bought and used San J Thai Peanut Sauce. If you would like to make your own, here is a recipe I found through Fox and Briar:

Coleslaw (the kind you find in the produce refrigeration section in the grocery store. If I want to make your own coleslaw, here's a recipe I found through: dinnerthendessert)
INSTRUCTIONS
Pre heat oven to 450 degrees
Clean and dry a sweet potato. Cut in half lengthwise.
Place on cookie sheet lined with wax paper skin side down.
Rub on inside of sweet potato olive oil and sprinkle with Himalayan salt.
Bake for 25 minutes.
Remove from oven.
While sweet potato cooks, prepare one bag of coleslaw.
Once sweet potato is cooked, place on plate and cover with coleslaw mixture.
Drizzle Thai peanut sauce of your choice over the top.
