Sweet Potato Slaw With Peanut Sauce Recipe

Here’s a delicious recipe I made up myself, enjoy!


Prep time - 10 mins

Bake time - 25 mins

Serves - 1 to 2 people

INGREDIENTS

INSTRUCTIONS

  • Pre heat oven to 450 degrees

  • Clean and dry a sweet potato. Cut in half lengthwise.

  • Place on cookie sheet lined with wax paper skin side down.

  • Rub on inside of sweet potato olive oil and sprinkle with Himalayan salt.

  • Bake for 25 minutes.

  • Remove from oven.

  • While sweet potato cooks, prepare one bag of coleslaw.

  • Once sweet potato is cooked, place on plate and cover with coleslaw mixture.

  • Drizzle Thai peanut sauce of your choice over the top.

  • Enjoy!
